Cheesy Chicken Breakfast Quesadilla with Scrambled Eggs
This delicious breakfast quesadilla combines tender chicken, fluffy scrambled eggs, and gooey melted cheese in a crispy tortilla. It's the perfect way to start your day with a hearty and satisfying meal that’s easy to customize with your favorite ingredients.
Optional: 1/2 cup sautéed bell peppersonions, or spinach
Salsaguacamole, or sour cream for serving
Instructions
In a nonstick pan over medium-low heat, add a little butter or oil. Whisk the eggs and pour them into the pan. Stir gently to make soft, fluffy scrambled eggs. Season with salt and pepper to taste. Set aside.
Lay a tortilla flat on your work surface. Add a layer of shredded cheese, followed by the scrambled eggs, chicken, and optional sautéed veggies. Top with another layer of cheese and place the second tortilla on top.
Heat a skillet over medium heat and add a little butter or oil. Place the quesadilla in the skillet and cook for 3-4 minutes on each side, until the tortilla is golden brown and crispy and the cheese is melted.
Slice the quesadilla into wedges and serve hot with salsa, guacamole, or sour cream on the side.
