Cheesy Chicken Breakfast Quesadilla with Scrambled Eggs

Ingredients
  

  • 1 cup cooked shredded chicken (grilled or leftover)
  • 4 large eggs
  • ½ cup shredded cheddar or Monterey Jack cheese
  • 2 large tortillas whole wheat or regular
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste
  • Optional: 1/2 cup sautéed bell peppers onions, or spinach
  • Salsa guacamole, or sour cream for serving

Instructions
 

  • In a nonstick pan over medium-low heat, add a little butter or oil. Whisk the eggs and pour them into the pan. Stir gently to make soft, fluffy scrambled eggs. Season with salt and pepper to taste. Set aside.
  • Lay a tortilla flat on your work surface. Add a layer of shredded cheese, followed by the scrambled eggs, chicken, and optional sautéed veggies. Top with another layer of cheese and place the second tortilla on top.
  • Heat a skillet over medium heat and add a little butter or oil. Place the quesadilla in the skillet and cook for 3-4 minutes on each side, until the tortilla is golden brown and crispy and the cheese is melted.
  • Slice the quesadilla into wedges and serve hot with salsa, guacamole, or sour cream on the side.

Notes

 Feel free to add veggies like spinach or bell peppers for extra nutrition. Serve with salsa, guacamole, or sour cream for additional flavor.
