- 2 cups cooked jasmine rice preferably cold or day-old for best texture
- 3 tablespoons vegetable oil
- 4 cloves garlic finely minced
- 1 small onion finely diced
- 1 cup frozen peas and carrots thawed
- 2 large eggs lightly beaten
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce optional
- 1 teaspoon sesame oil
- 2 green onions sliced
- Salt and pepper to taste
Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
Sauté the Aromatics: Add the minced garlic and diced onion to the skillet. Cook, stirring frequently, until the garlic is fragrant and the onion is translucent, about 2-3 minutes.
Add Vegetables: Toss in the thawed peas and carrots. Stir-fry for another 2 minutes until the vegetables are heated through and slightly tender.
