Instructions
Wash and cut the red potatoes into wedges and place them in the slow cooker.
In a small bowl, mix together olive oil, minced garlic, salt, pepper, thyme, and oregano.
Pour the seasoning mix over the potatoes and toss to coat evenly.
Sprinkle the Parmesan cheese over the top of the potatoes.
Cover and cook on HIGH for 4 hours without opening the lid.
Garnish with extra Parmesan before serving, if desired.
Notes
For a dairy-free option, substitute Parmesan with nutritional yeast. Leftovers can be stored in the refrigerator for up to 4 days.
