- 8 ounces yellowtail 2 fillets
- ⅛ cup rice vinegar plus more to taste (See note about "Types of Vinegar")
- ¼ cup soy sauce or tamari Use gluten-free certified if needed
- 1 tablespoon shaved ginger or ginger paste
- 2 garlic cloves minced
- 1 teaspoon wasabi OR horseradish
- 2 teaspoons sugar white or brown
- 1 tablespoon olive oil
Prep Fish: Rinse fillets, pat dry, and sprinkle with salt.
Make Sauce: In a saucepan, combine vinegar, soy sauce, ginger, garlic, wasabi, sugar, and olive oil. Heat on medium until sugar dissolves; cool.
