Ingredients
  

  • 8 ounces yellowtail 2 fillets
  • cup rice vinegar plus more to taste (See note about "Types of Vinegar")
  • ¼ cup soy sauce or tamari Use gluten-free certified if needed
  • 1 tablespoon shaved ginger or ginger paste
  • 2 garlic cloves minced
  • 1 teaspoon wasabi OR horseradish
  • 2 teaspoons sugar white or brown
  • 1 tablespoon olive oil

Instructions
 

  • Prep Fish: Rinse fillets, pat dry, and sprinkle with salt.
  • Make Sauce: In a saucepan, combine vinegar, soy sauce, ginger, garlic, wasabi, sugar, and olive oil. Heat on medium until sugar dissolves; cool.
  • Marinate: Pour half the sauce over fillets in a dish. Marinate for 5-10 minutes.
  • Bake: Preheat oven to 375°F (190°C). Place fillets on a parchment-lined baking sheet and bake for 20 minutes or until fish flakes easily.
  • Serve: Drizzle remaining sauce over fish, garnish with scallions or sesame seeds, and serve hot.

    • Notes: For a richer flavor, marinate longer but no more than 30 minutes.
