Ingredients

  • 1 lb 450g pasta (such as fettuccine, penne, or rotini)
  • 1 package 5.2 oz Boursin cheese (any flavor, but Garlic & Fine Herbs works well)
  • ¼ cup reserved pasta water
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • ¼ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 2 cups baby spinach optional
  • ¼ cup sun-dried tomatoes chopped (optional)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh basil chopped
  • Red pepper flakes for garnish optional

Instructions

  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water before draining.
  • While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant.
  • Reduce heat to low and add the Boursin cheese to the skillet. Use a wooden spoon to break it up as it melts.
  • Slowly stir in the heavy cream and reserved pasta water, mixing until you have a smooth sauce.
  • Add the grated Parmesan cheese and stir until melted and incorporated into the sauce.
  • If using, add the baby spinach and sun-dried tomatoes to the sauce, stirring until the spinach wilts.
  • Add the cooked pasta to the skillet and toss until it's well coated with the sauce. If the sauce is too thick, add a bit more pasta water to reach your desired consistency.
  • Season with salt and pepper to taste.
  • Remove from heat and let it rest for 2 minutes to allow the sauce to thicken slightly.
  • Serve hot, garnished with fresh basil and a sprinkle of red pepper flakes if desired.

Notes

  • Feel free to experiment with different flavors of Boursin cheese for variety.
  • For a protein boost, add grilled chicken, shrimp, or crispy bacon to the dish.
  • This pasta reheats well. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently on the stovetop with a splash of milk or cream.
