- 1 package 5.2 oz Boursin cheese (any flavor, but Garlic & Fine Herbs works well)
- ¼ cup reserved pasta water
- 2 tablespoons olive oil
- 2 cloves garlic minced
- ¼ cup heavy cream
- ¼ cup grated Parmesan cheese
- 2 cups baby spinach optional
- ¼ cup sun-dried tomatoes chopped (optional)
- Salt and freshly ground black pepper to taste
- 2 tablespoons fresh basil chopped
- Red pepper flakes for garnish optional
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water before draining.
While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant.
Reduce heat to low and add the Boursin cheese to the skillet. Use a wooden spoon to break it up as it melts.
