Ingredients
  

  • 1 cup cottage cheese preferably full-fat for the best texture
  • 5 large eggs
  • ½ cup all-purpose flour
  • ¼ teaspoon baking powder
  • 1 tablespoon honey or sugar optional, for sweetness
  • ½ teaspoon vanilla extract optional
  • A pinch of salt
  • Butter or oil for cooking

Instructions
 

  • Mix the Wet Ingredients: In a large mixing bowl, whisk together the cottage cheese and eggs until well combined. If you're using honey or sugar, add it at this stage along with the vanilla extract.
  • Combine Dry Ingredients: In a separate bowl, mix the flour, baking powder, and a pinch of salt.
  • Create the Batter: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. The batter will be slightly thick and lumpy because of the cottage cheese.
  • Preheat the Skillet: Heat a non-stick skillet or griddle over medium-low heat. Lightly grease with butter or oil.
  • Cook the Pancakes: Using a ladle or 1/4 cup measure, pour the batter onto the skillet to form pancakes. Cook for 2-3 minutes on each side, or until golden brown and bubbles form on the surface.
  • Serve: Serve the pancakes warm with your favorite toppings like fresh berries, a drizzle of honey or maple syrup, and a dollop of Greek yogurt or extra cottage cheese.
