Ingredients

  • 1 cup cottage cheese full-fat for a creamier texture
  • 2 tablespoons honey or maple syrup for sweetness
  • 1 teaspoon vanilla extract
  • 1 cup fresh berries strawberries, blueberries, or raspberries
  • 2 graham crackers crushed (for a crunchy base)
  • Fresh mint leaves optional, for garnish

Instructions

  • Prepare the Cottage Cheese Mixture:
  • In a blender, combine the cottage cheese, honey (or maple syrup), and vanilla extract. Blend until the mixture is smooth and creamy, ensuring there are no lumps.
  • Prepare the Graham Cracker Base:
  • Place the graham crackers in a zip-lock bag and crush them using a rolling pin, or pulse them in a food processor until you have fine crumbs. Divide the crumbs evenly among four serving bowls or dessert cups.
  • Layer the Cottage Cheese Mixture:
  • Spoon the creamy cottage cheese mixture over the graham cracker base in each bowl. Smooth the top with the back of a spoon, making sure it’s evenly spread.
  • Top with Fresh Fruit:
  • Add a generous amount of fresh berries to each bowl, arranging them on top of the cottage cheese mixture for a burst of color and flavor.
  • Chill and Serve:
  • Refrigerate the desserts for at least 30 minutes to allow the flavors to meld and the texture to set. Garnish with fresh mint leaves before serving if desired.

Notes

  • For added texture and flavor, try substituting the graham cracker base with a mixture of crushed granola or nuts.
  • Feel free to experiment with different fruits such as peaches, kiwi, or mangoes for a tropical twist.
  • If you prefer a sweeter dessert, increase the amount of honey or maple syrup.
  • This dessert can be made ahead of time and stored in the refrigerator for up to 2 days.
