Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 large yellow onions thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 cup beef broth
  • 1 teaspoon fresh thyme plus extra for garnish
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon balsamic vinegar
  • 1 ½ cups shredded Gruyère or mozzarella cheese

Instructions
 

  • Season the chicken breasts with salt, pepper, and garlic powder on both sides.
  • In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and cook, stirring occasionally, for about 15-20 minutes until the onions are soft and caramelized. Stir in balsamic vinegar, allowing the flavors to meld, and cook for another 2-3 minutes. Remove the onions from the skillet and set aside.
  • In the same skillet, add a little more olive oil if needed. Sear the seasoned chicken breasts for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  • Add beef broth and fresh thyme to the skillet, scraping up any browned bits from the bottom. Let the broth simmer for 2-3 minutes to reduce slightly.
  • Return the caramelized onions and seared chicken breasts to the skillet. Spoon some of the sauce over the chicken, then top each breast with a generous amount of the caramelized onions.
  • Preheat your oven’s broiler. Sprinkle the shredded Gruyère or mozzarella cheese evenly over the chicken. Transfer the skillet to the oven and broil for 3-5 minutes until the cheese is melted and bubbly.
  • Remove from the oven, garnish with extra fresh thyme, and let the chicken rest for 5 minutes before serving.
