- 4 pounds chicken bone-in and skin-on
- 2 cups basmati rice
- 1 teaspoon saffron threads
- 4 cups chicken broth
- 1 medium onion diced
- 3 cloves garlic minced
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1 teaspoon cumin
- 1 teaspoon paprika
- ¼ teaspoon cayenne pepper optional
- Fresh parsley for garnish
Season the chicken with salt, pepper, cumin, paprika, and cayenne pepper (if using). Heat olive oil in a large pot or deep skillet over medium-high heat. Sear the chicken for 5-6 minutes on each side until golden brown. Remove the chicken and set it aside.
In the same pot, add diced onions and minced garlic. Sauté for 3-4 minutes until soft and fragrant.
Add basmati rice to the pot and toast it with the onions and garlic for 2 minutes. Pour in the chicken broth and saffron threads. Stir to combine, ensuring the saffron infuses its color.
Place the seared chicken back into the pot, nestling it into the rice. Bring the liquid to a boil, then reduce the heat to low. Cover and let the dish simmer for 30-35 minutes, or until the rice is tender and the chicken is cooked through.
Once done, let the chicken and rice rest for 5 minutes before serving. Garnish with fresh parsley and enjoy!
