Garlic Butter Chicken and Shrimp Skillet

Ingredients
  

  • 2 chicken breasts about 1 lb, cut into bite-sized pieces
  • 1 lb large shrimp peeled and deveined
  • 4 tbsp unsalted butter
  • 4 garlic cloves minced
  • 1 tbsp olive oil
  • ½ cup chicken broth
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)
  • Lemon wedges optional, for serving

Instructions
 

  • Prepare the chicken and shrimp: Season the chicken pieces and shrimp with salt, pepper, paprika, and smoked paprika. Set aside.
  • Cook the chicken: Heat 1 tbsp of olive oil in a large skillet over medium heat. Add the chicken pieces and cook for 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • Cook the shrimp: In the same skillet, add 2 tbsp of butter. Add the shrimp and cook for 2-3 minutes on each side, until they turn pink and are fully cooked. Remove the shrimp from the skillet and set aside with the chicken.
  • Make the garlic butter sauce: In the same skillet, add the remaining 2 tbsp of butter and the minced garlic. Sauté for 1 minute until fragrant, being careful not to burn the garlic.
  • Add the broth and lemon juice: Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a simmer and let it cook for 2-3 minutes to reduce slightly.
  • Combine and finish: Add the cooked chicken and shrimp back into the skillet, stirring to coat them in the garlic butter sauce. Let everything simmer together for 1-2 minutes.
  • Garnish and serve: Remove from heat and garnish with freshly chopped parsley. Serve with lemon wedges on the side, if desired.

Notes

  • You can substitute chicken thighs for chicken breasts if you prefer a juicier texture.
  • Serve this dish over rice, pasta, or a bed of vegetables for a complete meal.
  • For a spicy kick, add a pinch of red pepper flakes while cooking the garlic butter sauce.
