Ingredients
  

  • 1 ½ lbs boneless skinless chicken breasts, cut into 1-inch cubes
  • 2 tbsp vegetable oil
  • 1 medium onion diced
  • 2 cups mixed vegetables carrots, zucchini, and broccoli, chopped
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • ¼ cup soy sauce
  • 2 tbsp butter
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 2 green onions thinly sliced
  • Sesame seeds for garnish

Instructions
 

  • In a small bowl, whisk together soy sauce, rice vinegar, honey, and 1 tablespoon of sesame oil to make the sauce. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken cubes and cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the remaining tablespoon of vegetable oil. Sauté the onion and mixed vegetables for 3-4 minutes until they start to soften.
  • Add minced garlic and grated ginger to the vegetables and cook for another minute until fragrant.
  • Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over the chicken and vegetables, stirring to coat evenly.
  • Add butter and the remaining tablespoon of sesame oil to the skillet. Stir everything together and let it simmer for 2-3 minutes until the sauce thickens slightly.
  • Remove from heat and let it rest for 5 minutes. Garnish with sliced green onions and sesame seeds before serving.

Notes

 For a complete hibachi-style meal, serve this chicken with steamed rice and a side of yum yum sauce. You can also add mushrooms or bean sprouts for extra texture and nutrients. For a spicier version, add a dash of sriracha or red pepper flakes to the sauce.
