Ingredients
  

For the Skewers:

  • 1 lb large raw shrimp peeled and deveined
  • 1 lb sea scallops
  • 3 tbsp olive oil
  • 3 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 4 cloves garlic minced
  • 1 tbsp honey
  • 2 tbsp fresh parsley or cilantro chopped
  • Salt and pepper to taste
  • Optional: ΒΌ tsp red pepper flakes for heat

For Assembly:

  • 8-10 wooden or metal skewers
  • Optional: Cherry tomatoes bell peppers, zucchini (for added veggies)

Instructions
 

Prepare the Seafood:

  • Rinse shrimp and scallops under cold water and pat dry. Remove any tough muscle from the scallops.

Marinate the Seafood:

  • In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, honey, parsley, salt, pepper, and red pepper flakes (if using).
  • Add the shrimp and scallops to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.

Assemble the Skewers:

  • If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  • Thread shrimp and scallops onto skewers, alternating between the two. Leave a little space between each piece for even cooking. Add vegetables if desired

Grill the Skewers:

  • Preheat the grill or grill pan to medium-high heat.
  • Lightly oil the grill grates to prevent sticking.
  • Place the skewers on the grill and cook for 2-3 minutes on each side for shrimp and 3-4 minutes for scallops until they are opaque and cooked through

Check for Doneness:

  • Shrimp should be pink and form a "C" shape, while scallops should be firm and slightly opaque.

Serve

  • Remove from the grill, let rest for a couple of minutes, and serve hot. Optionally, garnish with additional fresh herbs or lemon zest.

  • For a spicier kick, add red pepper flakes to the marinade.
  • Use fresh seafood for the best flavor and texture.
