Ingredients
  

  • 2 boneless skinless chicken breasts (thinly sliced)
  • 1 large onion sliced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 cup crumbled feta cheese
  • ½ cup sliced Kalamata olives
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 4 hoagie rolls toasted

Instructions
 

  • Prepare the Chicken and Vegetables: Heat olive oil in a pan over medium heat. Add sliced chicken breasts, garlic, oregano, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
  • Sauté the Vegetables: In the same pan, sauté the sliced onions and bell peppers for 6-8 minutes until softened and slightly caramelized. Set aside.
  • Add Feta and Olives: Return the chicken to the pan, and stir in the sautéed vegetables. Sprinkle crumbled feta and sliced Kalamata olives over the mixture, stirring gently.
  • Assemble the Sandwich: Toast the hoagie rolls until golden brown. Fill each roll with the chicken mixture, ensuring an even distribution of vegetables, feta, and olives.
  • Serve: Plate the sandwiches with a side of chips or a fresh Mediterranean salad. Enjoy the bold flavors of this fusion sandwich!

Notes

You can substitute feta with goat cheese for a creamier texture or use pita bread for a Mediterranean wrap version.
