Savory Chicken Sliders with Garlic Aioli

Ingredients
  

  • 1.5 lbs boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 12 slider buns
  • 1 cup mayonnaise
  • 3 cloves garlic minced
  • 1 tbsp lemon juice
  • ¼ cup fresh parsley chopped
  • 2 cups lettuce shredded
  • 2 medium tomatoes sliced
  • 1 red onion thinly sliced (optional)

Instructions
 

  • In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Rub this mixture over the chicken breasts.
  • Preheat grill or grill pan to medium-high heat. Grill chicken for 6-7 minutes per side, or until internal temperature reaches 165°F (74°C).
  • While chicken is cooking, prepare the garlic aioli. In a bowl, combine mayonnaise, minced garlic, lemon juice, and chopped parsley. Mix well and refrigerate until ready to use.
  • Remove chicken from grill and let rest for 5 minutes. Then, slice into thin strips.
  • Lightly toast the slider buns if desired.
  • To assemble, spread garlic aioli on both sides of each bun. Layer with lettuce, sliced chicken, tomato, and red onion (if using).
  • Secure each slider with a toothpick and serve immediately.

Notes

For a healthier version, use Greek yogurt instead of mayonnaise in the aioli. You can also add cheese or avocado for extra flavor. These sliders can be prepared ahead of time and assembled just before serving, making them perfect for parties or busy weeknights.
