- 4 medium potatoes diced
- 1 pound spicy sausage chorizo, andouille, or your choice, sliced
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1 green bell pepper sliced
- 1 onion chopped
- 2 garlic cloves minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced potatoes and cook, stirring occasionally, for 10-12 minutes until crispy and golden brown.
Push the potatoes to the side of the skillet and add the sliced sausage. Cook for 5-7 minutes until browned and slightly crispy.
