Ingredients
  

  • 16 large shrimp deveined and butterflied
  • 1 cup crab meat
  • 1 cup spinach
  • ½ cup artichokes chopped
  • ½ cup breadcrumbs or gluten-free breadcrumbs
  • ½ cup mozzarella cheese
  • ½ cup pepper jack cheese
  • 2 cloves garlic minced
  • Juice and zest of 1 lemon
  • Salt and pepper to taste
  • Olive oil
  • Smoked paprika
  • 4 tablespoons butter
  • Fresh dill chopped

Instructions
 

  • Prepare the Shrimp: Preheat the oven to 375°F (190°C). Devein and butterfly the shrimp. Pat dry and arrange on a baking sheet lined with parchment paper.
  • Prepare the Filling: In a bowl, mix crab meat, spinach, artichokes, breadcrumbs, cheese, garlic, lemon juice, and zest. Season with salt, pepper, and any extra herbs you like.
  • Stuff the Shrimp: Take a tablespoon of filling and stuff each shrimp. Press gently to secure the filling.
  • Bake the Shrimp: Drizzle with olive oil, sprinkle with smoked paprika, and bake for 15 minutes or until the shrimp are opaque and the topping is golden.
  • Make the Sauce: Melt butter in a saucepan, add minced garlic, and cook for 1-2 minutes. Stir in fresh dill and remove from heat.
  • Serve: Drizzle garlic butter dill sauce over the baked shrimp before serving.

Notes

  • Be sure not to overstuff the shrimp to avoid spilling.
  • For added flavor, substitute crab meat with lobster or add truffle oil.
