- 16 large shrimp deveined and butterflied
- 1 cup crab meat
- 1 cup spinach
- ½ cup artichokes chopped
- ½ cup breadcrumbs or gluten-free breadcrumbs
- ½ cup mozzarella cheese
- ½ cup pepper jack cheese
- 2 cloves garlic minced
- Juice and zest of 1 lemon
- Salt and pepper to taste
- Olive oil
- Smoked paprika
- 4 tablespoons butter
- Fresh dill chopped
Prepare the Shrimp: Preheat the oven to 375°F (190°C). Devein and butterfly the shrimp. Pat dry and arrange on a baking sheet lined with parchment paper.
