  • Prepare the apples: Peel and dice or grate one large apple. Set aside.
  • Mix dry ingredients: In a large mixing bowl, combine 1 ½ cups of flour, 1 ½ teaspoons baking powder, 2 tablespoons sugar, and 1 teaspoon cinnamon. Whisk well.
  • Mix wet ingredients: In a separate bowl, whisk together 1 egg, 1 ¼ cups milk, 2 tablespoons melted butter, and 1 teaspoon vanilla extract.
  • Combine wet and dry: Slowly pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix; the batter should be slightly lumpy.
  • Add apples: Fold in the diced or grated apple into the pancake batter.
